张虹教授,博士生导师

      张虹,女,博士,教授,博士生导师。1985年毕业于浙江工商大学(原杭州商学院),2000,2004年先后在浙江大学药学院,理学院获硕士、博士学位。曾多次作为访问学者赴美国农业部西部、南部研究中心,加拿大农业部研究中心,美国伦斯勒理工学院(Rensselaer Polytechnic Institute)等地进行交流及研究工作。近年来主要从事食品质量与安全与功能性食品的研究与开发工作,先后承担了科技部国际合作项目“基于壳仁分离技术的亚麻籽生物活性成分联合研究及设备开发”,浙江省重大招标项目“出口优势水产品(头足类)精深加工关键技术研究及系列产品研制”, 浙江省自然基金项目“蜂王浆致敏糖蛋白的结构表征及其与糖胺聚糖抗过敏性分子间相互作用的分子机理研究”, 浙江省自然基金项目“罐装食品中双酚类环氧衍生物的分析方法及其迁移规律的研究”, “食品中多种氟喹诺酮类药物残留分析方法研究”,“??鱼糖氨聚糖提取及其结构和活性的质谱研究”,浙江省农业科技成果转化项目“养殖大黄鱼、美国红鱼深加工技术中试示范”,浙江省科技厅项目“海洋生物肽研究及功能型评价”等国家和省部级科研项目。作为第一完成人获得中国商业联合会商业技术进步二等奖1次;作为第二完成人获得浙江省科技进步三等奖1次;作为主要完成人获得浙江省科技进步二等奖2次,中国商业联合会商业技术进步一等奖2次、二等奖2次;近年来在国内外学术期刊上发表论文90余篇,获授权国家发明专利6项。现任中国罐头工业协会专家委员会委员,浙江省食品安全专家委员会委员,浙江省食品协会理事。

      目前主要研究领域为:1. 食品质量与安全分析方法研究:以色——质联用为主要技术手段,结合蛋白组学、脂质组学及糖组学的理论,开发新的高精确度、高选择性、快速分析方法,综合监测食品掺假、药物残留及食品污染物,准确分析食品中各种物质的种类、分布及含量。2. 食品功能因子的活性筛选及鉴定:以微波、超临界流体色谱等技术分离纯化制备食品的功能因子,筛选它们的抗癌活性、抗氧化、降血糖、降血脂等功能活性,并采用FT-IR、GC-MS、HPLC-ELSD、UPLC-MS/MS以及NMR等现代谱学手段对这些功能因子进行结构鉴定。3. 高值化产品开发:利用低值食品的加工副产物通过生物转化、结构修饰等方法开发新型功能食品及药物。如开发木酚素、糖萜素、硫酸软骨素、硫酸皮肤素、肝素等,并通过质谱、核磁共振技术确定其结构、组成,并研究构效关系。

研究方向:

    (ⅰ)食品质量与安全:以色-质联用为主要技术手段,结合蛋白组学、脂质组学及糖组学的理论,开发新的高精确度、高选择性、快速分析方法,综合监测食品掺假、药物残留及食品污染物,准确分析食品中各种物质的种类、分布及含量;

    (ⅱ)功能因子评价:以微波、超临界流体色谱等技术分离纯化制备食品的功能因子,筛选它们的抗癌活性、抗氧化、降血糖、降血脂等功能活性,并采用FT-IR、GC-MS、HPLC-ELSD、UPLC-MS/MS以及NMR等现代光谱学手段对这些功能因子进行结构鉴定;

    (ⅲ)高值化产品开发:利用低值食品的加工副产物通过生物转化、结构修饰等方法开发新型功能食品及药物。如开发木酚素、糖萜素、硫酸软骨素、硫酸皮肤素、肝素等,并通过质谱、核磁共振技术确定其结构、组成,并研究其构效关系。
