Research vision

      The aim of my research is to enhance the dietary health of people across the world by improving the nutritional profile of processed foods. The focus is on understanding pre- and post-harvest processing effects on nutritional quality and safety of a range of plant crops, including legume and cereal seeds, tubers, fruits and vegetables. Low cost and efficient agricultural and food processing methods can be used to reduce waste, extend shelf life and enhance the nutritional quality diets. A major focus is the study of food carbohydrates (cell wall polysaccharides (i.e. fibre), starch, sugar), and the impact of processing on their properties.
